3 Hungarian Goulash Recipe with Dumplings
At the dinner table, you will always have three different groups. Chicken worshipers, Beef lovers, and pork stans.
Then there comes me who enjoys almost anything which has meat in it but you don’t worry here none of you will be disappointed. As I have curated these preparations keeping in mind all demands and needs.
We will start with the beef preparation first.
#1. Beef Goulash With Chive Dumpling
Beef goulash with dumplings is a classic dish that never loses its popularity. I prefer my goulash with chive dumplings, even more, therefore today I’ll share the recipe for it.
The requirements for the preparation are listed below.
Ingredient
To prepare Goulash you will need-
- 5 kg diced beef
- 4 cups of Massel beef
- 1 red capsicum finely chopped
- 2 brown onions thinly sliced
- 2 tbsp finely chopped marjoram
- 2 garlic cloves crushed
- 1 tbsp tomato paste
- 1 tsp grated lemon rind
- 1 tsp caraway seeds
- 2 cups of water
- 25 gm Butter
- 2 tbsp Olive oil
- Salt and pepper according to taste
- 1 tbsp paprika
Tip- Use Fresh Paprika for Enhanced Flavor
To prepare Chive dumplings you will need-
- 2 tbsp freshly chopped chives
- 190gm self-rising flour
- ¼ cup cold water
- 75 mg chilled cube butter
- Salt
Once you have arranged all the requirements for the Hungarian Goulash Recipe with Dumplings, now it’s time to see the method part.
Process
Step -1 You will require a casserole to prepare the goulash. So, at first heat the butter and olive oil in the casserole.
Step -2 Now add one-third of the beef and cook it for about 5 mins or more until it’s brown all over. You need to shake it occasionally.
Take a slotted spoon to transfer the beef into a heatproof bowl. Repeat the same process of cooking for the rest of the beef batch.
Step -3 Now in the casserole add onion, garlic, and the capsicum cook for about 10 mins, till the onion gets soft.
Step -4 Next, you need to add marjoram, lemon rind, and caraway seeds into the casserole. Shake the mixture until it gets aromatic.
Pour the water, stalk, and the beef along with the tomato paste into the same casserole. Reduce the heat to low, put a lid on and cook it at least for 1 and half hours. The beef needs to become tender.
Step -5 You need to shake the preparation in between the time and then again put the lid on. Taste it and add salt and pepper according to your preference.
Step -6 In the meantime, we will start preparing the chive dumplings. Take the flour in a bowl, and add chives to it.
Season it with a pinch of salt. Use your fingertips to rub the chilled butter into the flour, it should have a breadcrumbs texture.
Step -7 Make a well in the center of the flour bowl and add the cold water to it. Take a round-bladed knife to mix it until it gets evenly incorporated.
Next, divide the dough into 8 equal portions and roll each of them into a ball.
Step -8 Arrange the dumplings over the top of the goulash and cook it for about 15 mins. Cover the casserole with a lid while cooking.
Once the dumplings are cooked, remove them from the heat. Finally, beef goulash with chive dumplings is ready to go into the serving plate.

#2. Szeged Goulash with Dumplings (Pork Goulash)
As the name suggests Szeged goulash is one of the very authentic Hungarian dishes. I learned it from a friend who used to live in Szeged in Hungary.
If you are a pork lover and also enjoy traditional dishes then this will instantly become your favorite dish. So, in the chart below you will find the requirement list for the Hungarian Goulash Recipe with Dumplings below.
Ingredients
To prepare the Szeged pork goulash you will need-
- 600 gm Pork buttt
- 100 gm sour whipped cream
- 300 gm onions
- 1 red bell pepper
- ¼ beef broth
- 1 garlic clove
- 2 tsp tomato paste
- 500 gm sauerkraut
- 1 tbsp ground paprika
- 2 tbsp clarified butter
- Salt and pepper according to taste.
- 1 tsp carraway
To prepare the dumplings you will need-
- 8-day-old white rolls
- ½ liter milk
- 80 gm butter
- 6 eggs
- 2 tsp salt
- 20 gm melted butter
- 3 tbsp chopped parsley
We will quickly move on to the preparation part.
Process
Step -1 Take a dutch oven and heat the butter.
Add chopped pork into it and saute it until all the sides get browned properly then remove it into a separate bowl.
Step -2 Now in the same cooking utensil, add finely chopped onion and garlic to the pan and saute it until it gets translucent. Drain the sauerkraut and add that to the pan.
Step -3 Then add paprika and caraway along with salt and pepper according to taste. Add the meat, tomato paste, and broth to the pan.
Step -4 You need to bring it to a simmer and put a lid on and cook it for about 1 and a half hours basically till the meat gets soft.
Step -5 Meanwhile, start prepping for the dumplings as well, So remove the crust of the bread and cut it into cubes. Place the bread cubes in a bowl and pour the milk over.
Step -6 Separate the egg yolk and beat it with butter and salt until it gets creamy. Add the parsley and milk-soaked bread cubes into it. Mix it well and let it be like that for about 10-12 mins.
Step -7 Pour some water into a saucepan and add 2 tbsp salt and bring it to a boil. The water level should come 2 inches below the top of the saucepan.
In the meantime beat the egg whites to make them stiff. Pour it onto the bread bowl
Step -8 Next, on a large napkin pour hot water, and squeeze the excess water from the napkin. Now brush melted butter on one side of the damned napkin.
Shape the bread mixture into an approx 7cm thick roll and place it on the center of the buttered napkin.
Step -9 You need to fold both sides of the napkin loosely because we have to enclose the bread mixture. Then tie both ends with a string tightly.
So, the next step is to tie the bread mixture napkin on a wooden spoon that is longer than the diameter of the pot and place that in boiling water.
Step -10 Simmer the dumplings for about 50 mins until it gets firm. Additional 5 minutes of rest is required before you slice the dumplings.
Step -11 Remove the seeds, and white ribs and chop and stir them into the goulash for about 8 more minutes. Now add sour cream and mix.
Finally, remove the cloth from the dumplings, cut them into pieces (2 cm thick), and serve it with goulash on a serving plate.

#3. Chicken Goulash with Buttermilk Dumplings
It is a famous authentic Hungarian chicken goulash preparation. I love making this one as it is comparatively easy to make. You can also prepare this flavourful dish in a very short time at home.

Ingredients
- 2 pound skinless and boneless chicken thighs
- 2 cups chicken stock low sodium broth
- 1 tsp thyme leaves
- Salt and freshly ground pepper
- ¾ tsp caraway seeds
- ½ cup seasoned flour
- 2 tbsp Hungarian paprika
- 11/2 cup all-purpose flour
- 5 tbsp unsalted butter cubes
- 5 ounce can of diced tomato drained
- 2 tbsp coconut oil
- 2 garlic cloves minced
- 2 tsp baking powder
- 1 finely diced red bell pepper
- ½ cup sour cream
- Parsley chopped
- 1 large white onion chopped
Arrange all the ingredients first then follow the steps below to make this delicious goulash prep at home.
Process
Step -1 Preheat the oven to 425 Fahrenheit. Meanwhile, start prepping the chicken. In the first season, it is with salt and pepper.
Step -2 Coat the chicken with seasoned flour. Heat your skillet, and melt 1 tbsp butter and coconut oil in it. Then add the chicken and cook it over high heat.
Cook each side for 7 mins until it gets browned. Transfer the chicken into a separate bowl.
Step -3 Next, add onion, and garlic into the same skillet and cook until the onion gets translucent. Again add the chicken along with paprika and caraway, and cook for about 30 seconds. Add diced tomatoes to it.
Step -4 In a separate cup add 2 cups of the chicken broth and ½ cup of sour cream and whisk until it gets smooth.
Pour the mixture into the pan along with the thyme. Bring the entire thing to a boil.
Step -5 To make the dumplings in a food processor add all-purpose flour, baking powder, salt and pepper, 4 tbsp butter and pulse it. You should pulse till it turns into a coarse meal.
Step -6 Pour buttermilk into the processor and pulse till it forms a dough. Scoop 3 tbsp of the biscuit dough and place it over the chicken.
Step -7 Next transfer the entire skillet into the oven. Bake it for about 20 mins. The biscuit needs to turn golden brown. If it is required you can turn the boiler and boil it for about 2 mins to make it brown.
Step -8 Your dish is ready but it requires special style serving. So for that, first place the chicken thigh into a bowl then spoon the dumplings on top.
Step -9 Last but not the least, garnish it with chopped parsley.
