Process

  • Remove any beans that float after soaking the dried beans in 6 cups of water for the entire night.

  • After the bean mixture boils, lower the heat to a simmer and cover the pot; cook for an hour or half the beans are cooked.

  • Add the tomato and pepper mixture, chili powder, cumin, salt, pepper, oregano, beans, corn, and the leftover bean cooking liquid to a sizable slow cooker set over high heat.
  • Stirring occasionally, cook for around half an hour on high. Stirring to combine, add the quinoa and tomato sauce to the slow cooker. Cook on high for an additional hour, or until the Quinoa is fully cooked.
