Process
#1. In the bowl of a stand mixer, sprinkle the gelatin over 1/2 cup of cold water. Let the mixture stand for 10 minutes.
#2. Meanwhile, in a medium saucepan, combine the remaining 1/2 cup of cold water, granulated sugar, corn syrup, and salt. Place the pan over medium-high heat and stir until the sugar has dissolved. Bring the mixture to a boil and cook until it reaches 240 degrees F on a candy thermometer.
#3. Carefully pour the hot syrup into the bowl with the gelatin mixture and beat on high speed for 12 minutes. The mixture will become very thick and white. Add the vanilla extract and beat until combined.
#4. Grease a 9×13-inch baking pan with butter or cooking spray. In a small bowl, combine the confectioners’ sugar and cornstarch. Sprinkle the mixture over the greased pan and shake to coat the bottom and sides.
#5. Pour the marshmallow mixture into the prepared pan and spread it evenly. Sprinkle the top with more of the confectioners’ sugar and cornstarch mixture. Let the marshmallows sit at room temperature for several hours or overnight until they are firm.
