Korea has now become popular for two reasons – firstly the never growing old j-Hope and more! Secondly the tasty, delicious and Easy Japchae Recipe .
A dish of Korean stir-fried noodles with a sweet and savory sauce is known as japchae. The noodles are called japchae because they are combined with finely cut vegetables, eggs, mushrooms, and meat.
Today I’m here to share this extremely popular recipe I tried recently and became a huge fan for its taste.
Japchae Sweet Potato Starch Noodles Recipe
Served with colorful stir-fried vegetables and meat in a sweet and savory sauce, chewy sweet potato glass noodles (dangmyeon) are tossed in a chewy sweet potato glass noodle sauce.
Cooking up this beloved Korean noodle dish at home is easy with this Easy Japchae Sauce Recipe & Japchae Ingredients!

Ingredients | Quantity |
Large Dried Mushrooms, Soaked In Warm Water For 2 To 3 Hours, Cut Into Thin Strips | 2 large |
Beef, Or Pork Shoulder Cut Into ¼ Inch Wide And 2½ Inch Long Strips | 4 ounces |
Red Bell Pepper, Cut Into Thin Strips (Optional) | ½ |
Sweet Potato Starch Noodles [Dangmyeon] | 4 ounces |
Spinach, Washed And Drained | 4 ounces |
Soy Sauce | 2 tablespoons plus 1 teaspoon |
Sugar | 1 tablespoons plus 2 teaspoons |
Sesame Oil [Toasted] | 2 tablespoons |
Sesame Seeds [Toasted] | 1 tablespoon |
Garlic [minced] | 2 cloves |
White mushrooms, sliced thinly | 4 to 5 |
Onion | 1 Cup sliced |
Green onions, cut crosswise into 2 inch long pieces | 2 to 3 |
Large egg | 1 |
Ground black pepper | ¼ teaspoon |
Kosher salt | |
Vegetable oil |
Follow the process to get the taste like restaurant style Korean stir fried noodles at home!
For The Beef and Mushrooms Marinate –
Step:1 Take a bowl, add mushrooms & beef into them. Now add ground black pepper, soy sauce, toasted sesame oil, sugar and minced garlic with a wooden spatula and keep them aside in the fridge.
For Egg Garnish
Step:2 Make sure the white stringy stuff (chalaza) is removed from the yolk. Use a fork to mix in a pinch of salt.
Step:3 Heat a nonstick pan with one teaspoon vegetable oil. With a kitchen towel, wipe off the excess oil from the pan once it has been swirled around in order to leave only a thin layer on it.
Step:4 When pouring the egg yolk mixture into the pan, turn off the heat to preserve the jidan’s yellow color. Let the mixture spread thinly by tilting it. Continue to cook it for about 1 minute with the remaining heat.
Let it sit for another minute on the pan. After it has cooled, cut it into thin strips.
Time For Noodles And Veggies Preparation
Step:5 Take a large pot full of water and let it boil. After that add spinach and blanch to it for around 60 seconds.
Once done take out the boiled spinach and blanch from the water using a strainer and wash it with cold water once to stop its cooking. Remove excess water if any with your hands.
Step:6 After that chop it off; no need of fresh chopping and add it to a bowl. Take a spoon of soy sauce and toasted sesame oil to mix with the chopped spinach.
Step:7 Now is the time to boil the noodles in the same boiling water. Boil it for at least 1 minute and slowly keep stirring it to avoid it from getting sticky. To get noodles nicely cooked and chewy boil it for another 7 minutes.
Once done take them out with the help of strainer and cut them off in small parts. Now again take a bowl add the noodles to them along with sugar, soy sauce and toasted sesame oil.
Add these seasonings to noodles will add more taste as well as prevent the noodles from getting sticky.
Step:8 Following the process heat up the skillet on medium high flame. After that add vegetable oil along with onions, green onion and a pinch of salt. Cook it for 2 minutes and once onions get a nice brown colour transfer them to the noodle bowl.
Step:9 Don’t turn off the flame; heat up the skillet again and add vegetable oil and pinch of salt to it. Now add the mushrooms stir fry for 2 minutes to get it soften and transfer it again to the noodle bowl.
Step:10 Again add vegetable oil to the heated skillet and add carrots to fry for 30 seconds. Along with that add red bell peppers sliced and stir fry for another 20 seconds. Transfer all these cokked veggies to the noodles bowl.
Step:11 Now for cooking beef add vegetable oil to the skillet. Along with beef add the mushroom mixture also and cook it till the beef gets a nice pink colour and mushrooms become more soft.
You can also cook Japchae Recipe Vegetarian version by using Tofu instead of beef!
Once done finally transfer them to the noodle bowl.
How To Mix and Serve Japchae Sweet Potato Starch Noodles Recipe?
Step:12 Now take a mixing bowl and add soy sauce, sugar, ground black pepper, minced garlic and toasted sesame oil and mix them well with hands.
Again, take the already prepared egg garnish and add it to this mixing bowl. Before serving it in plate add some more sesame seeds to it.

There are variety of Korean dishes that you can eat along with japchae recipe.
In my case I like it semi chilled served along with homemade Korean BBQ Tacos. You can also have them with hot and spicy pork bulgogi or Korean potato salads or Korean purple rice or kalbi.
You can also cook this recipe in extra and keep it in fridge and stir fry before serving it to your guests.

Yes this japchae sweet potato recipe – is popular among Korean for it being so healthy and tasty. All those noodle lovers like me can go for this recipe anytime because its low in calories and also fat free.

What can I Substitute for Japchae Noodles?
If you want to use another noodles for this Japchae Sweet Potato Starch Noodles Recipe you can go for Chinese vermicelli or glass noodles.
They are similar too japchae noodles but are made with mung bean starch instead of sweet potato starch.
