#1. Cherry-Mocha Smoothie

Cherry-Mocha Smoothie

A very Easy Coffee Smoothie Recipe that will hardly take you 5 minutes. You can have the smoothie along with some freshly home baked cookies or muffins.

Ingredients

Unsweetened Cocoa Powder2 Tablespoons
Espresso Coffee Powder1 Teaspoon
Dark Chocolate Shavings, Chocolate-Covered Espresso Beans1 Tablespoon
Almond Butter2 Tablespoons
Unsweetened Chocolate Almond Milk1 Cup
Vanilla Fat-Free Greek Yogurt5.3 To 6-Ounce
Ice Cubes2 Cups
Banana½ Medium
Vanilla1 Teaspoon
Frozen Unsweetened Pitted Dark Sweet Cherries1 Cup

Process

Step 1: Take the blender add cherries, banana, cocoa powder, coffee powder [I prefer espresso], Greek yoghurt, almond milk and vanilla. Cover it up and blend for seconds to get a smooth texture.

Now add ice cubes to it and blend again. (You may also serve the smoothies without blending the ice cubes)

And it’s ready to be served. I generally serve it with chocolate chunks. However you can serve it with banana slices, espresso beans or cocoa powder.

 

#2. Mocha Overnight Oats

Giving your oatmeal a pinch of lovely coffee flavor can make your healthy breakfast into a delicious one.

Ingredients

Pure Maple Syrup1 Tablespoon
Milk [Less Fat]½ Cup
Rolled Oats½ Cup
Cooled Coffee¼ Cup
Cocoa Powder1 ½ Teaspoons
Chopped Walnuts1 Tablespoon
Cacao Nibs1 Teaspoon
Chia Seeds1 ½ Teaspoons

Process

Step 1: Take a bowl or jar add oats, Chia Seeds, coffee, milk, cocoa powder and maple syrup. Cover it up freeze it overnight.

Step 2: I love walnuts as a topping especially for this one. You can use cacao nibs or your favorite toping for this simple coffee recipe.

You can store mocha overnight oats in the fridge for at least 5 days.

 

#3. Pineapple Coffee Cake

When it comes to fruit cakes pineapple are must have for me. This coffee cake goes best in combination with black coffee.

Whole-Wheat Pastry Flour1 Cup
Sugar1/2 Cup Plus 2 Tablespoons
Baking Powder1 Tablespoon
Nonfat Plain Yogurt1 Cup
Baking Soda1 Teaspoon
Canola Oil¼ Cup
Pineapple Chunks Diced Fresh Or Canned1 ½ Cups
Vanilla Extract1 Teaspoon
Salt½ Teaspoon
Chopped Pecans¼ Cup
Large Egg1

Process

Step 1: First step get your oven preheated to 350 degrees.  Now take baking pan (I prefer square in shape) and coat it with cooking spray.

Step 2: Now in a bowl take whole wheat flour, baking powder, baking soda, all-purpose flour, salt and half cup sugar. Whisk them well.

Step 3: Further take another bowl add vanilla, yoghurt, eggs and whisk them well until it gets smooth. Add all the dry ingredients, pineapples chopped or canned (whichever you have) and mix them well. Now take the baking pan and spread the batter.

Step 4: Now take pecans and remaining sugar mix them well and sprinkle them over the batter.

Step 5: It would take around 5o minutes to get a nice golden color on top. You can also check if it’s cooked properly by inserting a skewer or knife in it. If it comes out clean its ready.

After that wait for it to cool down, cut them in squares and have them all.

Step 6: If you hate pineapples or are allergic good thing is that you can bake this quick coffee cake with other fruits also.

Try this recipe with other fruits like peach, rhubarb, blueberries. Add 10 to 15 minutes more if you are using frozen fruits.

 

#4. Apple Coffee Cake

Brown Sugar1 ¼ Cups
Baking Spray With Flour
Unsalted Butter¾ Cup
White Whole-Wheat Flour2 ¼ Cups
Whole-Milk Greek Yogurt1 Cup Plain
Apples, Peeled And Cut2 Medium
Rolled Oats½ Cup
Large Eggs3
Vanilla Extract3 Teaspoons
Ground Cinnamon3 Teaspoons
Salt½ Teaspoon
Baking Powder1 Teaspoon
Granulated Sugar¼ Cup
Baking Soda1 Teaspoon
Confectioners’ Sugar½ Cup
Whole Milk1 Tablespoon
Chopped Pecans¼ Cup

Process

Step 1: Get your oven ready with preheat on 350 degrees. Take the baking tray and coat it well with baking spray or butter.

Step 2: Now take a mixer attached with paddle (you can also use a whisker but it will take time). After that take 1/2 cup butter, 3/4 cup brown sugar along with granulated sugar and beat them well.

It would take around 5 minutes but using a whisker keep doing it until you get a light fluffy texture.

While beating the mixture add eggs one by one and keep on beating till you keep on adding. Lastly add 2 teaspoons of vanilla and continue the process.

Step 3: Following that take another bowl add 2 teaspoons of cinnamon to it along with 1 3/4 cup of flour.  Include baking powder, baking soda and salt and whisk them all.

Add this mixture to the butter mixture already prepared while continuing the beating process. Finally add the apples (mashed or chunks whatever you like)

You can bake the cake at this level also but if you have sometime you can add layers to it for more taste.

Step 4: Again take another bowl add pecans, oats, 1/2 cup brown sugar 1/2 cup reaming flour and 1/4 cup of butter left. Repeat the blending process and get the mixture ready.

Step 5: Now spread half of the first batter in the baking pan. After that spread the second pecan and oats mixture on to it. Again repeat the first batter and finally the remaining oat pecan mixture at top.

Step 6: You would need at least 55 minutes to bake the apple cake. However you can keep a check on your cake with using a knife of skewer.

Once baked bring it out from the oven and let it cool down.

Step 7: You can serve it as this also. But if you want to make it look more presentable take sugar, milk and 1 teaspoon of vanilla in a bowl and whisk them well.

Drizzle this mixture all over the cake and cut the cakes into shapes ready to be served.

Wanted to enjoy the whipped coffee trend of Starbucks at home? You can easily enjoy those fluffy coffee drinks of Starbucks just by making with any non-dairy milk.

Process

Step 1: Pour milk in two glasses and set aside.

After that take a bowl add sugar and coffee to mix them together. Whisk them hard to get a fluffy thick texture for at least 3 minutes. You can also use a whisker machine for it.

Step 2: Now divide the whipped mixture of coffee and sugar in those glasses of milk set aside.

Ola it’s ready!! SO QUICK…

And off course it’s better to stir before drinking so that it mix well with the milk.
